Homemade Butter Recipe

Ingredients

  • 300ml heavy cream
    (For larger batches, simply double the amount)

  • Optional: HH Celtic Salt (for salted butter)

  • Bowl of ice and water


Method

  1. Pour the heavy cream into a mixer and mix on medium–high speed.

  2. Every few minutes, scrape down the sides of the bowl.

  3. As the cream thickens and buttermilk begins to separate, place a towel over the mixer to prevent splatter.

  4. Once the buttermilk has fully separated, transfer the butter directly into a bowl of ice and water.

  5. Allow the butter to stand for a few minutes, then gently press and rinse to remove excess buttermilk.

  6. Place the butter onto a baking sheet.

  7. Sprinkle with Celtic salt (if using) and gently combine through.

  8. Store the butter in an airtight glass container or a butter bell.


Storage

  • Store in the refrigerator for 2–3 weeks

  • Keep sealed to preserve freshness and flavour
