Homemade Butter Recipe
Ingredients

300ml heavy cream
(For larger batches, simply double the amount) -
Optional: HH Celtic Salt (for salted butter)

Bowl of ice and water
Method

Pour the heavy cream into a mixer and mix on medium–high speed.

Every few minutes, scrape down the sides of the bowl.

As the cream thickens and buttermilk begins to separate, place a towel over the mixer to prevent splatter.

Once the buttermilk has fully separated, transfer the butter directly into a bowl of ice and water.

Allow the butter to stand for a few minutes, then gently press and rinse to remove excess buttermilk.

Place the butter onto a baking sheet.

Sprinkle with Celtic salt (if using) and gently combine through.

Store the butter in an airtight glass container or a butter bell.
